First an observation and then a structure for your learning , if I might.

There is not and never will be a box to click on Rasch software to "Test validity".

Validity is a much more complex issue than that; Rasch will help, but good 
theory driven item development t is a prerequisite.

So, start with a good blurb on Validity:
e.g., Sam Messick is a pretty good Start:
Messick, S. (1995). Validity of psychological assessment. American Psychologist, 
50(9),74–149.

Then go to chapter 13 of your favourite book ;-)) and get an intro to the Messick 
/ Rasch link there.

That is developed further in:
Bond, T. G. (2004). Validity and assessment: A Rasch measurement perspective. 
Metodologia de las Ciencias del Comportamiento, 5(2), 179–194.
and
Smith, E.V., Jr. (2001). Evidence for the reliability of measures and validity of 
measure interpretation:A Rasch measurement perspective. Journal of Applied 
Measurement, 2(3), 281–311.

The two Smith and Wolfe papers then develop the detail of how to & 
interpretation very nicely:

and then trawl RMT/ Google  as suggested by Mike for lots of examples:
